Parsley contains five times as much iron per ounce as spinach. Rich in Vit A, iron and potassium, Vit B-1 B-2,Vit C, Vit E, calcium, chlorine, chlorophyll, copper, iodine, manganese, mucilage, niacin, phosphorus, protein, silicon, sodium, starch and sugar. Half a cup of fresh parsley contains 27 times as much Vit A as 3/4 cup of milk, 7 times as much niacin, almost 20 times as much vit C, 2 times as much iron but only 1/4 the number of calories. Parsley is a preventative medication in that its antiseptic properties cleanse the inner body of germs, waste material and incipient diseases: its trace minerals which provide necessary elements, can prevent certain illnesses. The leaves and root have been used for centuries, and are quite safe for most people. However, parsley root is discouraged during pregnancy, as a strong decoction of the root has been known to cause miscarriages. One of parsley’s primary constituents, myristicin, may also increase the heart rate of the fetus. If you are taking lithium, only take parsley under doctor’s supervision.
